Traditional additive-free Highland tequila produced at NOM 1579 (El Pandillo) using mature Blue Weber agave, stone ovens, tahona extraction, open-air fermentation, and copper pot distillation.
Don Vicente Tequila Blanco is produced at Destilería El Pandillo (NOM 1579) in Jesús María, Jalisco, under the direction of master distiller Felipe J. Camarena. Crafted from mature Blue Weber agave grown in the Highlands of Jalisco, the tequila showcases traditional production methods designed to preserve the natural character of the agave. The agaves are slowly cooked in traditional stone and brick ovens before being crushed with a tahona. Fermentation takes place in open-air stainless steel tanks without agave fibers using deep well water, followed by double distillation in copper pot stills. Before bottling, the tequila undergoes an aeration (oxygenation) process intended to soften the spirit while maintaining its agave-forward profile. The resulting blanco delivers aromas and flavors of cooked agave, citrus, minerality, black pepper, earth, and subtle herbal notes with a rich, creamy mouthfeel and a clean, lingering finish. Produced without additives, Don Vicente Blanco reflects El Pandillo’s commitment to traditional craftsmanship and minimally manipulated tequila.
