Overview

Traditionally crafted additive-free Highland tequila produced at NOM 1579 using mature Blue Weber agave, slow stone-oven cooking, copper pot distillation, and meticulous small-batch production.

Tequila General Gorostieta Blanco is produced at Destilería El Pandillo (NOM 1579) in Jesús María, Jalisco. Crafted from mature Blue Weber agave grown in the Highlands of Jalisco, the tequila reflects a production philosophy centered on traditional methods, careful process control, and preserving the natural character of the agave. The agaves are steam cooked in traditional stone masonry ovens for a minimum of 24 hours, followed by a full cooling period before milling. Juice extraction is performed using a mechanical mill, after which fermentation proceeds for approximately 96 hours using selected yeast under closely monitored conditions for temperature, pH, and sugar conversion. Classical music is played throughout fermentation as part of the distillery’s production environment. Following double distillation in copper pot stills, the tequila is cold filtered to improve clarity while maintaining its natural flavor profile. Produced without additives, the blanco highlights cooked agave, citrus, minerality, black pepper, herbal notes, and a rich, balanced texture representative of the Highlands of Jalisco. Each bottle is hand-filled, hand-labeled, individually inspected, and signed and numbered by the brand’s Maestra Tequilera prior to release.
