Fortaleza Añejo is a traditionally crafted, additive-free tequila produced at Tequila Los Abuelos (NOM 1493) in Tequila, Jalisco. Made from mature Blue Weber agave grown in the Tequila Valley (Los Valles), it reflects Fortaleza’s commitment to preserving historic tequila-making methods while producing an elegant, agave-forward añejo. Production begins with slow cooking the agaves in traditional stone and brick ovens before they are crushed using a tahona. Fermentation takes place in open-air wooden tanks (pipones) without fibers using deep well water, followed by double distillation in copper pot stills. The tequila is matured in used American white oak bourbon barrels, allowing the oak to complement rather than dominate the cooked agave character. Bottled at 40% ABV (80 proof), Fortaleza Añejo is distilled at or near proof, blended for consistency, and produced without additives, resulting in a balanced profile of cooked agave, vanilla, caramel, oak, baking spice, dried fruit, and subtle citrus.
