Overview

Traditional additive-free Highland tequila produced at NOM 1579 using mature Blue Weber agave, stone ovens, tahona extraction, open-air fermentation, and copper pot distillation.

Terralta Blanco is produced at Destilería El Pandillo (NOM 1579) by Felipe J. Camarena using mature Blue Weber agave grown in the Highlands of Jalisco. The agaves are slow cooked in traditional stone ovens, crushed with a tahona, fermented in open-air stainless steel and wooden tanks without fibers, and double distilled in copper pot stills. Produced without additives, Terralta Blanco emphasizes cooked agave, earthy minerality, citrus, herbal notes, black pepper, and a rich mouthfeel that reflects the Highland terroir from which it takes its name.
